I would like to know, if someone wants to install Mcafee Antivirus or any other AV on the SVM Red Hat Server or Ubuntu Server, which all paths/processes/etc... to be excluded.

Please review the following KB for general recommendations on the subject you asked about.
The following services must not be affected, or blocked in any way, by the Anti-Virus Agent software:
You can acquire the path of each of the services using the "systemctl status" command [Red Hat example].
The path where each service is located will be written in the output of that command.
