Probably the easiest way is on the beacon, turn off the IIS Service temporarily, or if the beacon is not using IIS then in the Beacon console set 'Local web server'->'No local web server'

Any inventory packages already on the beacon in the incoming folder will still upload. You can always stop this by disabling the Upload Inventory scheduled task.
