System Tasks will show you when the update task ran. The task might then find the downloaded version to be the same as you have already installed and not do an update.
What you see in the System Health Dashboard is the date of the last time the task did find a new version and actually did run an update.
So typically you will see daily tasks, but System Health might be a few days old.
