I am just starting to use AdminStudio so forgive me if this is a basic question anwsered before.

How do I delete registry keys/hive strutures before the install.

How do I delete files or direcitores before install.

How do I uninstall another piece of software first? I know what the command is for uninstalling that software based on the " HKLM\SOFTWARE\Microsoft\Windows\CurrentVersion\Uninstall\"

Still waiting for my Application Repacking book from installshield to arrive. Hopeing that has alot of the good stuff in it.

If I understand correctly, you need to uninstall some existing application A before you install application B. In that case you may look into custom action which will do this for you. This custom action should execute before you install application B. The book you ordered covers everything you need.
